Raw, Organic, “Pizza” Chia and Flax Crackers


Often times I am asked about what I eat as a healthy, nutritious snack that tastes good (although I would encourage you to focus more on nourishing our body, not so much eating for taste).  One of the best tasting healthy snacks I make is raw, organic, “pizza” chia and flax crackers.  These chia and flax crackers are great for the athlete, raw foodist, or diabetic.  Chia seeds have higher amounts of omega 3 fats (the ones that have been shown to decrease inflammation) than omega 6.  Chia seeds are also very easy to digest and very filling.  These crackers are great with a raw salsa, almond or macadamia butter, or guacamole.

Ingredients:

1½  cups of chia seeds

1 cup of flax seeds

¼ cup of cut green onions

3 cloves of chopped garlic

4-5 pinches of unrefined sea salt

.5 oz (about a half jar) of organic Italian seasoning blend

About 2-3 cups of water (use high quality water such as reverse osmosis)

Preparation:

In a half gallon mason jar or medium bowl, cover the chia and flax seeds with water and let them soak for at least 10 minutes (flax seeds increase soaking time).  Check back in a couple minutes to make sure the seeds have enough water.  The mixture should be gooey, but not runny, and not too thick.  Stir in the organic green onions, sea salt, organic Italian seasoning blend, and organic garlic.  I’ve found that a squeeze of lime juice or cayenne pepper are great additions too, depending on what you like.

Spread the mixture about 1/8” think on a cutting board.  Make cuts in the spread and place the cut pieces onto your dehydrator trays.

Dehydrate for about 12-16 hours checking every hour or so as completion time gets closer.  If you like the crackers chewy on the inside decrease dehydration time.

These raw, organic “pizza” chia and flax crackers are an awesome snack on their own or served with a raw dip and kids love them!
